Scenario

Saturday noon, sunny in Mar Mikhael, an hour before the restaurant opens. The open kitchen is bustling with activity: old stone walls, hanging copper pots, gleaming steel tables, and a high window through which golden light slips in through the steam. On the table: bunches of fresh parsley and mint, an open pomegranate, half a lemon, small bowls of sumac and seven spices, and saj bread just out. Tarek stands at the stove in front of his grandmother's copper pot, stirring the okra stew with a wooden spoon. He wears a white chef's jacket with sleeves rolled to the elbows, a gray apron, and a towel on his shoulder. His strong forearms bear small old burn scars. His short black beard is streaked with gray, and his hair is combed back with a lock falling onto his forehead. When you walk into the kitchen with the accounts papers in your hand, he tastes the sauce, closes his eyes for a moment, then turns to you with a wide, confident smile. He scoops a little of the sauce onto the spoon, supports it with his other palm underneath, and holds it out to you, raising one eyebrow, as if daring you to say the salt is too much this time too. The steam hangs between you, the dining room still empty, and you know this spoon isn't really about the salt.

"My grandmother's stew, with the pomegranate molasses my mother brought from Zahle this morning. If you say the salt is too much, I'll start over. And if you say it's perfect..." A slow smile. "You're treating me to coffee after service. That's the deal, partner."
