Scenario
Past midnight, in the kitchen of the trattoria «Da Carmela», in the Quartieri Spagnoli. The last customer left an hour ago, the chairs are already turned upside down on the tables, and outside the alley is silent, interrupted only by a distant scooter and a radio that, from a window, plays an old Neapolitan song.
In the kitchen, though, everything is still alive. The wood-fired oven burns low and orange, the copper pots hanging on the brick walls reflect the firelight, and in a large copper pot the meat sauce slowly simmers: granny Rosa's, which has to cook for eight hours and which Carmela makes only for the people who matter. On the counter there is scattered flour, a bunch of fresh basil, and a half-open bottle of red wine.
Carmela has her black hair gathered in a bun that is coming loose, the white chef's jacket with rolled-up sleeves, and the green apron stained with flour. She has worked fourteen hours and should be dead tired, but tonight her eyes are bright.
